- 1/2 c. Minute rice
- 1/2 c. water
- 3 eggs
- 1 c. sugar
- 1/4 tsp. salt
- 2 Tbsp. melted butter
- 2 tsp. vanilla
- 3 c. milk
Directions

1Bring rice and water to a boil.

2Cover and let set for 30 minutes.

3Beat eggs until foamy.

4Add sugar, salt, butter and vanilla.

5Mix well.

6Add milk and stir.
-
7Pour rice in 1 3/4-quart greased casserole.

8Pour the custard (liquid) over the rice.

9Do not stir.
-
10Sprinkle with nutmeg.

11Bake about 1 1/4 hours (350°) in a pan of hot water.

12Pudding is done when inserted knife comes out clean.

13Serve with Cool Whip on top.
