Rice Pudding

Ingredients

  • 1/2 c. rice
  • 2 c. cold water
  • 1 qt. milk
  • 3 eggs
  • 1/2 c. sugar
  • 1 Tbsp. vanilla
  • cinnamon to taste

Directions

    Place rice in the cold water and boil until water is absorbed. Add milk and cook slowly until rice is done, stirring occasionally. Beat eggs; add in sugar, vanilla and cinnamon.

    Pour into rice; let come to a boil.

    Remove from heat.

    Pour into casserole dish. Refrigerate when cooled.
