Rice Pudding

Ingredients

  • 1/2 gal. milk (plus a little more, 1/4 c.)
  • 1 c. rice (Riceland, long grain)
  • 1 c. sugar
  • 4 to 5 eggs (whole), beaten well
  • 1 tsp. vanilla
  • cinnamon (optional)

Directions

    Pour 1/2 gallon milk into a pot and heat it on the stove.

    When the milk is warm, put the rice and sugar and cook until thick. Beat eggs in separate bowl and add vanilla.

    Then remove rice from stove for about 1 minute (to stop cooking), then add beaten eggs and fold until mixed together.

    Pour into bowl until cool and then put cinnamon all over the top (if you wish).
