  • 1 c. rice, not instant
  • 6 c. milk
  • 2 beaten eggs
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1 tsp. salt

Directions

    Put rice and milk in a large pan with lid. Spray the pan with cooking spray. Bake at 350° for 1 hour. Remove from oven and add the rest of the ingredients and mix well. Pour into a pretty bowl and cover tightly with aluminum foil. This keeps the heat in to cook the egg. When ready to serve, sprinkle the top with some cinnamon and sugar.
