- 1/4 c. raisins
- 5 eggs
- 2 1/4 c. cooked rice
- 5 tsp. vanilla
- 1/2 c. sugar
- 1/2 c. milk
- additional milk
- nutmeg
Directions

1Preheat oven to 350°.

2Butter a 1-quart casserole dish.

3Put raisins in a small microwave-proof bowl; add a little water. Microwave on High for 50 to 60 seconds; set aside.

4In a medium bowl, lightly beat eggs.

5Add raisins and water, rice, vanilla, sugar and milk.

6Stir thoroughly.

7Add enough additional milk to make mixture loose.

8Pour into prepared pan.

9Sprinkle with nutmeg. Bake in water bath for about 50 minutes or until knife inserted in center comes out clean.
