Rice Pudding

  • 2 cups water
  • salt
  • 1 lemon zest
  • 1 tablespoon margarine
  • 15/16 cup rice
  • 6 1/3 cups skim milk
  • 1 1/4 cups sugar
  • ground cinnamon for sprinkling

Directions

    In a large saucepan, heat water, salt, lemon peel, and margarine and bring to a boil.

    Add the rice and stir.

    Let grains expand for a few minutes. In a small saucepan, heat milk.

    When the water has almost fully evaporated, add about 1/3 of the hot milk.

    Stir constantly to prevent the rice from sticking to the bottom of the pan.

    Gradually add remaining milk and keep stirring.

    When almost cooked, add sugar and cook for a few more minutes, stirring carefully, so that rice grains do not break.

    Remove lemon peels and place in serving dish.

    Let cool.

    To serve, garnish with cinnamon.
