- 1 1/2 c. cooked rice, lightly packed
- 3/4 c. sugar
- 3 c. whole milk
- 1/4 c. butter
- 3 eggs
- 1/2 c. raisins (optional)
- 1/2 tsp. nutmeg or cinnamon
- 1/2 tsp. lemon peel
- pinch of salt
Directions

1Cook rice and drain well.

2Put butter in drained hot rice to melt or melt it in a small pan.

3Add sugar, salt and milk and stir.

4Add eggs and blend well.

5Add raisins, if desired, and lemon peel and mix to blend.

6Turn into buttered baking dish and sprinkle with nutmeg or cinnamon.

7Bake at 375° for about 45 to 55 minutes or until done.
