  • 1/4 cup short-grain rice for risotto, such as Arborio
  • 2 1/2 cups whole milk
  • 3 tbsp sugar
  • 1 tbsp butter, plus more for the dish
  • Pinch of ground cinnamon or freshly grated nutmeg
  • 1 quart (1 liter) baking dish

    Lightly butter the dish.

    Rinse the rice under cold running water, then drain well.

    Combine the rice and the milk in a bowl and let stand for 30 minutes.

    Preheat the oven to 300F (150C).

    Stir the sugar into the rice.

    Pour into the dish, dot with butter, and sprinkle with cinnamon.

    Bake for 22 1/2 hours, or until the top is golden.
