- 1 cup cooked white rice
- 1 quart milk
- 1/2 cup white sugar
- 1/4 teaspoon salt
- 2 eggs, beaten
- 1/2 teaspoon vanilla extract
- 1 teaspoon butter
- 1 pinch ground nutmeg
Directions

1Preheat oven to 350 degrees F (175 degrees C).

2Butter a 2 quart baking dish.

3In a 2 quart saucepan over medium heat, scald the milk and remove from heat.

4Add the rice, sugar and salt.

5Mix well and slowly add the eggs, vanilla, and butter.

6Pour mixture into a 2 quart baking dish.

7Sprinkle nutmeg on top.

8Bake for 40 minutes.

9Stir pudding after 20 minutes.
