  • 4 eggs
  • 1 c. sugar
  • 2 c. half and half
  • 1 tsp. vanilla
  • 2 c. cooked rice (better to do this a day ahead)
  • 1/2 stick margarine
  • cinnamon, nutmeg and raisins (if desired)

Directions

    Melt margarine in a 2-quart casserole. Beat eggs and add sugar, milk, vanilla and rice. Put mixture in casserole. Bake, uncovered, about one hour at 350°. Recipe may be halved.
