- 1/3 c. uncooked long grain rice
- 1/4 c. water
- 2 c. skim milk
- 2 Tbsp. sugar
- 1/8 tsp. salt
- egg substitute equivalent to 1 egg
- 1 tsp. vanilla
- 1/4 c. raisins
- cinnamon to taste
Directions

1Combine rice, water, 1 1/2 cups skim milk, sugar and salt in saucepan.

2Bring to a boil while stirring constantly.

3Reduce heat, cover and simmer about 25 minutes or until rice is tender. Combine remaining skim milk, egg substitute and vanilla; beat slightly.

4Add to cooked rice and continue cooking over low heat until thick and creamy (about 10 minutes more).

5Fold in raisins. Spoon into dessert dishes and sprinkle with cinnamon.

6Makes 4 servings.
