Ingredients

  • 1 lb. bow tie pasta (farfalle)
  • 5/8 c. extra virgin olive oil (Alissio)
  • 2 bunches fresh basil, chopped
  • 1/2 tsp. dry oregano
  • 2/3 lb. Mozzarella cheese, diced in 1/4-inch cubes
  • 1 large tomato, seeded and chopped
  • 3/4 c. olives, chopped (black or green)
  • 1 or 2 cloves garlic, finely chopped (to taste)
  • salt and pepper

Directions

    Cook pasta until al dente.

    Drain and spread out in large bowl. Coat with 2 tablespoons olive oil.

    When cool, sprinkle with basil, oregano, Mozzarella, tomato and olives.

    Mix garlic with remaining olive oil and add to salad.

    Sprinkle with salt and pepper to taste and Asagio or other good, freshly grated Parmesan or Romano cheese. Serves 6.
