- 2 1/2 lb. chicken thighs and/or drumsticks
- 3/4 c. uncooked wild or plain rice
- 3 oz. can mushrooms
- 1/2 stick butter
- 1 Tbsp. grated onion
- 2 chicken bouillon cubes
- 3/4 c. hot water
- Salt to taste
Directions

1Flour and brown chicken in a little oil.

2Dissolve bouillon cubes in hot water. Put rice and salt in large flat casserole and sprinkle with grated onion. Add mushrooms and arrange chicken over all.

3Pour bouillon over all and dot with butter.
