  • 1 lb. lean ground beef
  • 2 c. chopped onion
  • 2 c. chopped green pepper
  • 1 Tbsp. chili powder
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 2 c. (16 oz.) canned tomatoes (Mexican flavored)
  • 1 c. cooked white rice
  • 1 c. grated Cheddar cheese

Directions

    In an ovenproof skillet, saute beef, onion and green pepper with seasonings until meat is no longer pink and vegetables are tender.

    Stir frequently to crumble meat.

    Add tomatoes and rice. Top with cheese and bake at 350° until cheese melts.

    Makes 6 to 7 servings.
