- 1 c. long grain rice
- 1/4 lb. Cheddar cheese, grated coarsely
- 1 (4 oz.) can green chiles, drained
- 1/4 c. chopped pimiento
- 3/4 c. thinly sliced scallions (include green tops)
- 3/4 c. mayonnaise
Directions

1Cook rice according to package directions; cool and turn into a large bowl.

2Fold in mayonnaise, cheese, chiles, pimiento and scallions.

3Serve at room temperature.
