  • 1 c. long grain rice
  • 1/4 lb. Cheddar cheese, grated coarsely
  • 1 (4 oz.) can green chiles, drained
  • 1/4 c. chopped pimiento
  • 3/4 c. thinly sliced scallions (include green tops)
  • 3/4 c. mayonnaise

Directions

    Cook rice according to package directions; cool and turn into a large bowl.

    Fold in mayonnaise, cheese, chiles, pimiento and scallions.

    Serve at room temperature.
