- 2 cups cooked long-grain rice
- 2 tablespoons lemon juice
- 14 cup olive oil
- 1 small sweet onion, finely chopped
- 2 medium tomatoes, chopped
- 14 cup green bell pepper, finely chopped
- 3 tablespoons parsley, chopped
- 2 tablespoons capers
- salt and pepper
Directions

1Combine the rice, lemon juice, oil, onion, tomatoes, bell pepper, parsley and capers in a large bowl.

2Mix thoroughly and season to taste with salt and pepper.
