Ingredients

  • 1 cup rice, cooked
  • 6 tablespoons salad oil
  • 3 tablespoons vinegar or 3 tablespoons white wine
  • 1 teaspoon salt
  • 4 tablespoons tarragon
  • 14 cup parsley
  • 12 cup green pepper, choped
  • 14 cup green onion
  • 1 cup peas, cooked
  • 1 cucumber
  • 1 cup cherry tomatoes

Directions

    Cook rice and add first 4 ingredients while hot.

    When chilled, add parsley, green pepper, green onion and peas.

    Just before serving, add: 1 cucumber peeled and cubed and 1 cup cherry tomatoes.
