- 2 C cooked rice
- 2 green peppers, sliced thin
- 2 pimentos, sliced thin
- 4 tomatoes, peeled & cooked
- 2 Tbsp. chopped green onion
- 2 Tbsp. chopped parsley
- 3/4 C olive oil
- 1/4 C wine vinegar
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 clove garlic, minced
Directions

1Combine first 6 ingredients in large bowl. Mix lightly with two forks. Beat together remaining ingredients. Pour over rice. Toss again lightly. Chill. Serve very cold. Can also use canned tomatoes instead of fresh.
