  • 4 c. chicken broth
  • 2 c. rice (uncooked)
  • 3 to 6 oz. oil marinated artichoke hearts
  • 5 green onions, chopped
  • 1 (4 oz.) olives, diced
  • 1 large green pepper, diced
  • 3 celery, diced
  • 1/4 c. parsley
  • 1 tsp. curry powder
  • 2 c. Hellmann's mayonnaise
  • salt and pepper

Directions

    Cook rice in chicken broth for 15 minutes.

    Cool.

    Chop and dice next 6 items.

    Mix with marinade juice.
