Ingredients

  • 1 c. mayo
  • 1 Tbsp. white vinegar
  • 2 small cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. chopped onion
  • 1/2 c. shredded carrots
  • 2 c. cooked rice (instant is better to use)
  • 1/2 pkg. frozen baby peas, thawed

Directions

    Combine the first 5 ingredients; set aside.

    Mix rice, peas, carrots and scallions, then add remaining mixture.

    Chill and serve.
