Ingredients
- 1 1/2 c. water
- 1 1/2 c. Minute rice
- 1 c. shredded fat-free Mozzarella cheese
- 1 c. sliced pepperoni, halved
- 1 large tomato, chopped
- 1 green pepper, cut into strips
- 2 mushrooms, sliced
- 6 pitted ripe olives, sliced
- 1 c. fat-free Italian dressing
Directions

1In medium saucepan, bring the water to boil.

2Stir in rice. Cover and remove from heat.

3Let stand for 5 minutes; cool.

4In a large bowl, mix the rice with remaining ingredients except the dressing.

5Stir in 1/2 cup of dressing.

6Toss to mix well.

7Chill. Just before serving, toss with remaining dressing to taste.
