Rice Salmon Loaf

Ingredients
- 1 c. salmon
- 1/2 c. cooked rice
- 1 Tbsp. parsley, chopped
- 2 Tbsp. chopped celery
- 2 egg yolks
- 2 Tbsp. melted margarine
- 1 Tbsp lemon juice
- salt to taste
- pepper to taste
Directions

1Select standing aged prime rib roast (any size).

2Stand meat at room temperature 1 hour.

3Preheat oven to 375°.

4Rub meat with salt, sprinkle with pepper.

5Place fat side up in shallow roast pan.

6Do not cover.
-
7Do not add water.
-
8Put roast in oven and cook one hour.

9Turn off heat, but do not open oven door at any time until ready to serve.

10Regardless of length of time meat is in oven, 30 or 40 minutes before serving, turn oven on again; reset temperature to 375°.

11Cook meat for those remaining 30 or 40 minutes.

12Now open oven door, remove roast to serving platter.

13The meat will be very brown and crisp on the outside.

14Carve thin slices; it will be pink and juicy and medium rare.
