Ingredients

  • 1 lb. lean ground beef
  • 2 c. each: chopped onion and green pepper
  • 2 Tbsp. chili powder
  • 1 tsp. salt (if desired)
  • 1/4 tsp. each: pepper and garlic powder (can use fresh garlic)
  • 2 c. (16 oz.) canned tomatoes
  • 3 c. cooked rice
  • 1 c. grated sharp cheese

Directions

    In ovenproof skillet saute beef, onions and peppers with seasonings until meat is no longer pink and vegetables are tender. Stir frequently to crumble meat.

    Add tomatoes and rice.

    Top with cheese and bake at 350° until cheese melts.
