- 2 c. each: chopped onion and green pepper
- 2 Tbsp. chili powder
- 1 tsp. salt (if desired)
- 1/4 tsp. each: pepper and garlic powder (can use fresh garlic)
- 2 c. (16 oz.) canned tomatoes
- 3 c. cooked rice
- 1 c. grated sharp cheese
Directions

1In ovenproof skillet saute beef, onions and peppers with seasonings until meat is no longer pink and vegetables are tender. Stir frequently to crumble meat.

2Add tomatoes and rice.

3Top with cheese and bake at 350° until cheese melts.
