- 1 c. cold, cooked rice
- 3 egg yolks, beaten
- 1/2 c. milk
- 2 Tbsp. melted butter or margarine
- 1 c. shredded Cheddar cheese
- 3 egg whites
- 1/8 tsp. salt
Directions

1Preheat oven to 300°.

2Combine rice, egg yolks, milk, butter and cheese in a bowl.

3Mix well.

4Beat egg whites with salt in mixer bowl until stiff peaks form.

5Fold gently into rice mixture. Spoon into greased 8 x 10-inch baking dish.

6Bake for 30 minutes or until set and brown.
