Rice-Stuffed Peppers

- 3 large green peppers, halved
- 1 lb. ground beef
- 1 egg
- 2 c. tomato juice
- 1 chopped onion
- 1/4 c. rice, cooked or 1 c. leftover rice
- 1 tsp. salt
Directions

1Remove seeds from peppers.

2Cook in boiling water for 10 minutes; drain.

3Place in baking dish.

4Mix ground beef, cooked rice, egg, salt, onion and enough tomato juice to moisten.

5Fill peppers.
-
6Pour remaining tomato juice over peppers.

7Bake at 375° for 30 minutes.
