Rice-Stuffed Peppers

  • 3 large green peppers, halved
  • 1 lb. ground beef
  • 1 egg
  • 2 c. tomato juice
  • 1 chopped onion
  • 1/4 c. rice, cooked or 1 c. leftover rice
  • 1 tsp. salt

Directions

    Remove seeds from peppers.

    Cook in boiling water for 10 minutes; drain.

    Place in baking dish.

    Mix ground beef, cooked rice, egg, salt, onion and enough tomato juice to moisten.

    Fill peppers.

    Pour remaining tomato juice over peppers.

    Bake at 375° for 30 minutes.
