  • 3/4 cup rice
  • 5 5/8 tablespoons sugar
  • 2 1/8 tablespoons butter
  • 1 orange
  • 3 3/8 cups milk
  • 2 eggs separated
  • 2 tablespoons rum
  • salt

Directions

    Preheat the oven to 180C.

    Cook the rice in the milk for approximately 30 minutes, stirring it continuously so it does not stick.

    After it has been cooking for 20 minutes, add the sugar, butter, a pinch of salt, and the grated orange peel. When it is done, the milk should be completely absorbed. Let it cool.

    Beat the egg whites to stiff peaks and set aside.

    Add the egg yolks and the rum to the rice mixture, then fold in the egg whites.

    Line the muffin pan with wax paper muffin liners coated with breadcrumbs, and fill with the rice mixture.

    Bake for approximately 30 minutes, until golden on top.

    Remove the treats from the oven and serve warm, sprinkled with powdered sugar.
