Rice With Apples

  • 3 to 4 apples per layer, peeled and sliced (for 3 layers, use 9 to 12 apples)
  • 1 1/2 c. raw rice, rinsed and drained
  • 2 1/4 c. milk
  • 1 egg yolk
  • 3 Tbsp. sugar
  • butter

Directions

    In pot, cover rice with water; bring to boil.

    Add milk; boil 10 minutes.

    Cover and let stand 15 minutes.

    Butter casserole dish.

    Mix egg yolk with sugar.

    Stir into rice.

    Alternate layers starting with rice and then apples into casserole dish.

    Top layer must be rice.

    Top with bits of butter.

    Bake, covered, in oven at 325° for 45 minutes.

    Turn off oven; let stand in oven 1 hour. Serve with a sprinkling of granulated sugar.
