- 1 medium onion, chopped
- 1 Tbsp. oil
- 1 (14 1/2 oz.) can stewed tomatoes
- 1 (16 oz.) can black beans (undrained)
- 1/2 tsp. dried oregano leaves
- 1/2 tsp. garlic powder
- 1 1/2 c. instant brown rice
Directions

1Cook and stir onion in hot oil in saucepan until tender, but not browned.

2Add tomatoes, beans, oregano and garlic powder. Bring to boil.

3Stir in rice.

4Return to boil.

5Reduce heat and cover; simmer 5 minutes.

6Remove from heat.

7Let stand 5 minutes. Makes 8 servings.
