- 1 1/2 c. arborio
- 1 Tbsp. salt
- 3 eggs
- 2 Tbsp. freshly squeezed lemon juice
- 1 c. freshly grated Parmesan plus additional for table
- freshly milled white pepper
- 3 Tbsp. unsalted butter
Directions

1Bring water to boil in large saucepan.

2Meanwhile, in bowl or pitcher with pouring spout, combine rice and salt.

3Over high heat, pour rice into boiling water in slow, steady stream so as not to break boil.

4Reduce heat to medium and simmer uncovered until rice is cooked 12 to 15 minutes.

5Do not stir.
