- 1 1/2 ounces pine nuts, about 1/3 cup
- 2 tablespoons butter
- 1/4 cup finely chopped onion
- 1/2 teaspoon finely minced garlic
- 1 cup converted (not instant) rice
- 1 1/2 cups water
Directions

1Place pine nuts in skillet and cook, stirring often, until lightly browned.

2Remove from heat.

3Heat half the butter in saucepan and add onion and garlic.

4Cook, stirring, until onion is wilted.

5Add rice and stir.

6Add pine nuts and water and bring to boil.

7Cover closely and let simmer exactly 17 minutes.

8Uncover, fluff the rice with fork and stir in remaining butter.
