- 2 cups ricotta cheese
- 1/2 cup toasted almond
- 1/2 cup paprika
- 1/2 cup fresh mixed herbs (parsley, basil etc)
Directions

1Take about a tbls of ricotta at a time, and using moistend hands, roll into small balls.

2Roll the balls into either of the three toppings.

3Lay alternately red (paprika),brown (nuts),green (herbs) out onto a platter.
