- 2 1/4 c. flour
- 3 eggs
- 1 1/2 c. Ricotta
- 1 1/4 c. sugar
- 1/2 c. raisins
- 1 Tbsp. ground lemon rind
- 1 1/2 Tbsp. baking powder
- 2 Tbsp. lemon juice
Directions

1In a large bowl add to the flour the egg yolks, Ricotta, lemon rind, lemon juice and raisins.

2Mix delicately.

3Then add the baking powder and the whipped egg whites.

4Stir the ingredients together and pour on a nonstick oven pan.

5Cook on medium heat for about 1 hour.
