- 2 c. all-purpose flour
- 3/4 c. granulated sugar
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 6 Tbsp. butter, melted
- 8 oz. Ricotta cheese
- 1/2 c. milk
- 2 eggs
- 1 tsp. grated lemon peel
- 1/2 tsp. almond extract
- 3/4 c. chopped pecans
Directions

1In large bowl, combine flour, sugar, baking powder, baking soda and salt; set aside.

2In large bowl, beat together remaining ingredients except pecans.

3Add mixture to dry ingredients with pecans; stir just to blend.

4Pour into greased 9 x 5-inch loaf pan.

5Bake at 350° for 50 to 60 minutes until toothpick inserted in center comes out clean.
