  • 1/4 c. chopped, cooked chicken or turkey
  • 1/2 c. fresh pineapple
  • 1/2 c. low-fat Ricotta cheese
  • 1 tsp. butter
  • 3 eggs
  • 2 tsp. low-fat milk
  • chopped parsley

Directions

    Combine chicken or turkey, pineapple and Ricotta cheese.

    In nonstick pan, melt butter.
  3. 3
    Beat eggs and milk together and pour into pan.
  4. 4
    Allow omelet to cook around sides and middle.
  5. 5
    Put Ricotta cheese mixture on eggs.
  6. 6
    Fold over one side of omelet and continue to cook until eggs are done and not runny.

    Sprinkle parsley on top of omelet and serve.
