- 1/4 c. chopped, cooked chicken or turkey
- 1/2 c. fresh pineapple
- 1/2 c. low-fat Ricotta cheese
- 1 tsp. butter
- 3 eggs
- 2 tsp. low-fat milk
- chopped parsley
Directions

1Combine chicken or turkey, pineapple and Ricotta cheese.

2In nonstick pan, melt butter.

3Beat eggs and milk together and pour into pan.

4Allow omelet to cook around sides and middle.

5Put Ricotta cheese mixture on eggs.

6Fold over one side of omelet and continue to cook until eggs are done and not runny.

7Sprinkle parsley on top of omelet and serve.
