- 1 cup flour
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 1 tablespoon sugar
- 1 cup ricotta cheese
- 1 cup low-fat milk
Directions

1Mix all of the dry ingredients (flour, baking powder, baking soda, salt and sugar) together in a medium bowl.

2Add the ricotta and milk and stir until mixed.

3It will be lumpy.

4Let the batter rest about 10 minutes at room temperature.

5Cook on a griddle or large pan over medium-high heat until golden brown on the bottom.

6Flip pancake over and continue to cook until golden brown on bottom side and cooked through.

7Serve with maple syrup, powdered sugar, or any other sweet topping (such as fruit).
