  • 2/3 lb. Ricotta
  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • dash of salt
  • 3 large eggs
  • 1 (13 oz.) can evaporated milk
  • 1/3 tsp. vanilla extract
  • 1/3 tsp. almond extract
  • 1 unbaked 9-inch deep dish pie crust

Directions

    Mix first 4 ingredients with a mixer on low for 2 minutes. Add eggs, milk and extracts and mix 1 more minute.

    Pour into pie shell and bake at 450° for 15 minutes, then at 325° for 35 to 40 minutes.
