  • 5 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 1/4 cups dry riesling wine
  • 2 tablespoons fleur de sel, plus more to taste
  • 1/2 teaspoon freshly ground 5 peppercorn blend, plus more to taste
  • 4 garlic cloves, peeled and smashed
  • 1 1/2 teaspoons finely chopped fresh rosemary
  • 1 cup dried apricot
  • 2 yellow onions, each cut into 8 wedges
