Rigatoni Vodka

Ingredients

  • 4 c. marinara sauce
  • 4 1/2 oz. vodka
  • 6 oz. Prosciutto or bacon
  • 2/3 c. grated Parmesan
  • 2 oz. smoked salmon
  • 1/2 c. chopped onion
  • 1 lb. cooked rigatoni
  • 3 egg yolks
  • 1 pt. heavy cream

Directions

    Place bacon and onion in pan and cook.

    When bacon begins to brown, remove.

    Add smoked salmon and vodka.

    (Take the pan away from the flame when adding vodka.)

    Allow to simmer several minutes, then add marinara sauce, Parmesan cheese, heavy cream and egg yolks.

    Simmer for several minutes, then toss in rigatoni. Garnish with parsley and serve.
