- 1/2 lb. Italian sausage
- 3 Tbsp. butter or margarine
- 1 onion, chopped
- 1/2 c. fresh mushrooms, sliced
- 1 clove garlic, crushed
- 1 c. uncooked rice
- 2 c. chicken broth
- 1/2 c. white wine or sherry
- 1/2 c. grated Parmesan cheese
Directions

1Remove sausage from casing and crumble.

2In large skillet, melt butter.

3Add sausage, onion, mushrooms and garlic.

4Saute until tender, about 5 minutes.

5Stir in rice and saute until rice is lightly browned.

6Add chicken broth, wine or sherry.

7Cover and simmer 20 minutes or until rice is tender.
