- 1 whole chicken
- 6 potatoes
- 1 pkg. carrots
- 3 large onions
- 6 stalks celery
- 3 Tbsp. salt
- 2 Tbsp. pepper
- grated cheese
- 2 1/2 c. long grain rice
Directions

1Bring 6 to 8 quarts water with above ingredients (except rice and grated cheese) to a boiling point.

2Skim top of water of excess fat; turn down to simmer for 2 to 3 hours.

3Strain broth into another pan; bring to rapid boil.

4Add rice.

5Cover and cook for about 20 minutes.

6Add broth as needed to rice.

7Spread rice on dish; sprinkle grated cheese on top.

8Serve chicken and vegetables on side.
