- 1 c. raw rice
- 3 Tbsp. olive oil
- 3 c. chicken broth
- 1/2 c. grated cheese
- 3 tsp. oleo
- 1/4 c. minced onion
- 1 tsp. saffron (if powdered, use 1/4 tsp.)
Directions

1Cook raw rice and onion in oleo and olive oil until onion starts to color.

2Add chicken broth to which saffron has been added.

3Cook, covered, over low heat, stirring often, until broth is absorbed and rice is tender.

4Stir in cheese and serve.
