Ingredients

  • 1 lb. ground round
  • 2 Tbsp. margarine
  • 1 1/2 c. rice
  • 3 or 4 green onions, finely chopped
  • 1/4 c. dry white wine or beef broth
  • 1/2 c. chopped mushrooms
  • pinch of saffron or turmeric
  • 4 c. chicken broth
  • 1 small can tomato paste
  • salt
  • pepper
  • 1 Tbsp. sugar
  • 1/2 c. shredded cheese of your choice

Directions

    In frypan, brown meat and drain.

    Add tomato paste, sugar, salt, pepper; mix.

    In separate pan melt margarine, add rice and onion.

    Coat thoroughly stirring with wooden spoon until yellow and add wine or 1/4 cup broth until absorbed.

    Lower heat and stir in all remaining ingredients.

    Place in Pam sprayed casserole and bake about 1 hour at 350°.

    This is a popular church supper dish. Also excellent stuffing for peppers.
