- 1 medium onion, diced
- 1/2 c. butter or margarine
- 1 c. uncooked long grain rice
- 1 3/4 c. broth (chicken or beef)
- 1/2 c. sherry
- 1/2 c. grated Parmesan cheese
Directions

1Saute onion in 1/4 cup butter in large skillet until golden brown.

2Add rice and stir until rice turns yellow.

3Add broth and sherry.

4Bring to a boil, then reduce heat.

5Cover and let simmer 15 to 20 minutes, until liquid is absorbed.

6Add remaining 1/4 cup butter and stir in cheese.

7Makes 6 servings.
