  • 1 lb. yellow squash, cut in rounds
  • 1/2 c. crumbled Ritz crackers (23)
  • 1 onion, chopped
  • 1/2 c. celery, chopped fine
  • 1/2 c. grated sharp Cheddar cheese
  • 1/4 c. green pepper, chopped fine
  • 2 eggs, beaten
  • 1 c. milk
  • 1/2 c. evaporated milk
  • 1/4 tsp. salt
  • 2 Tbsp. melted margarine
  • pepper

Directions

    Place squash in a saucepan with a small amount of water; cook until tender. Drain and mash. Add other ingredients to squash. Butter a casserole dish and spoon in mixture. Bake at 350° for 30 minutes. When done it has consistency of pudding. Serves 6.
