- 6 to 8 medium white turnips
- 2 Tbsp. shortening or bacon drippings
- 1 tsp. salt
- 2 tsp. sugar
- dash of pepper
- 1/2 tsp. flour
- 2 eggs, separated
Directions

1Prepare, cube and boil turnips 15 to 20 minutes in salted water (1/2 teaspoon salt to 1 cup water).

2Drain and mash well.

3Add shortening, salt, pepper, sugar and flour.

4Beat egg whites until stiff and set aside.

5With same beater, beat yolks until light. Stir yolks gradually into hot turnips.

6Fold in greased 1 1/2-quart casserole.

7Bake, uncovered, for 30 to 35 minutes or until puffy and lightly browned.

8Serves 6.
