  • 2 cups thinly sliced okra (1/2 pound)
  • 3 cups water
  • 1 1/2 cups uncooked long-grain rice
  • 1/4 cup minced green onions
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon minced fresh or 1/4 teaspoon dried thyme
  • 1 teaspoon minced seeded habanero pepper or 2 teaspoons minced seeded jalapeno pepper
  • 1/2 teaspoon salt
  • 2 garlic cloves, minced

    Heat oil in a large saucepan over medium-high heat. Add okra; saute 4 minutes. Add water and remaining ingredients; bring to a boil. Reduce heat; simmer 15 minutes or until rice is done.
