Ingredients

  • 3 c. chicken, cooked and chopped
  • 1 1/2 sticks butter
  • 2 lb. Velveeta cheese, diced
  • 2 onions, chopped
  • 1 (12 oz.) pkg. spaghetti
  • 5 c. chicken broth
  • 2 cans Ro-Tel tomatoes
  • 2 green peppers, chopped
  • 1 large can mushrooms, drained
  • 1 (10 oz.) pkg. green peas, thawed
  • 1/4 c. green olives, chopped
  • 1/4 c. black olives, chopped

Directions

    Saute onion and green peppers in butter until tender.

    Use broth to cook spaghetti; drain and save some broth to moisten casserole.

    Mix all ingredients together and put into two 9 x 13 x 2-inch casserole dishes.

    Bake, covered, 1 hour at 375°.

    These may be frozen before baking.
