  • 2 1/2 lb. beef roast
  • 2 stalks celery
  • 8 medium potatoes
  • 1 large onion
  • 1 can carrots
  • salt and pepper

Directions

    Preheat oven to 400°.

    Place roast in medium roaster pan and cover with water.
  3. 3
    Add chopped onion, celery, salt and pepper. Cover and let cook 30 minutes. Turn oven down to 325°.

    Let cook slowly, approximately 4 hours. Check roast to be sure it is covered with water. After 4 to 4 1/2 hours, add potatoes and carrots.

    Cook about 1 1/2 hours or until potatoes are tender.
