- 2 1/2 lb. beef roast
- 2 stalks celery
- 8 medium potatoes
- 1 large onion
- 1 can carrots
- salt and pepper
Directions

1Preheat oven to 400°.

2Place roast in medium roaster pan and cover with water.

3Add chopped onion, celery, salt and pepper. Cover and let cook 30 minutes. Turn oven down to 325°.

4Let cook slowly, approximately 4 hours. Check roast to be sure it is covered with water. After 4 to 4 1/2 hours, add potatoes and carrots.

5Cook about 1 1/2 hours or until potatoes are tender.
