Directions

1Let roast stand at room temperature for at least 1 hour. Preheat oven to 375°.

2Place meat in shallow pan.

3Do not cover or add water; cook 1 hour.

4Turn off heat but do not open oven at any time until ready to serve.

5Regardless of how long meat has been in oven, turn oven to 375° 40 minutes before serving.

6Do not preheat.

7Always medium-rare regardless of size of roast.
