    Let roast stand at room temperature for at least 1 hour. Preheat oven to 375°.

    Place meat in shallow pan.

    Do not cover or add water; cook 1 hour.

    Turn off heat but do not open oven at any time until ready to serve.

    Regardless of how long meat has been in oven, turn oven to 375° 40 minutes before serving.

    Do not preheat.

    Always medium-rare regardless of size of roast.
