- 1 None rotisserie chicken, quartered, skin removed
- 3/4 cup Moroccan marinade
- 3.5 oz couscous
- 1 oz baby arugula
- 1 None large tomato, chopped
- 1/4 cup toasted pistachios
- None None lemon wedges, to serve
Directions

1Preheat broiler. Line a baking tray with parchment paper.

2Cover chicken wings and ends of drumsticks with foil to prevent burning. Brush chicken with marinade and arrange on tray. Broil for 6-8 mins. Discard foil.

3Meanwhile, in a medium bowl, prepare couscous according to package instructions. Add arugula and tomato.

4Distribute couscous between serving plates. Arrange chicken on top and sprinkle with pistachios. Serve with lemon wedges.
